Ingredients

  • 50 small raw shrimp
  • 1/2 c. dry white wine
  • 2 tbsp butter
  • 1 carrot, minced
  • 1 onion, minced
  • 1 small white turnip, peeled and minced
  • 1 celery stalk, minced
  • 4 c. fish stock
  • 1 1/2 tsp salt
  • Juice of 1/2 lemon
  • 1 tsp anchovy paste
  • Croutons

Directions

Peel shrimp and devein. Wash and drain. Put shrimp into saucepan. Add wine, cover and simmer 5 minutes. Press shrimp and liquid through a strainer or whirl in blender. Melt buter and saute vegetable till tender. Add fish stock and pureed shrimp. Add next 3 ingredients. Reheat slightly and serve sprinkled with croutons.df
