Ingredients

  • 1 c. white vinegar
  • 1 1/2 tsp whole cloves
  • 1 1/2 tsp coarsely broken cinnamon sticks
  • 1 tsp celery seed
  • 8 lbs. (about 24) fully ripe tomatoes
  • 2 c. water
  • 1 tbsp instant minced onion
  • 1/2 tsp cayenne pepper
  • 1 c. sugar
  • 4 tsp salt

Directions

Bring first 4 ingredients to boil and remove from heat. Scald and crush tomatoes. Put tomatoes in kettle with water, onion and cayenne. Bring to boil and cook 15 minutes. Put through food mill. Combine this puree and sugar in kettle; cook, stirring frequently, for 45 minutes, or until reduced by half. Strain vinegar, discarding spices and add with salt to tomato mixture. Continue cooking, stirring almost constantly, for 30 minutes, or until thick. Ladle into 4 hot sterilized 1/2 pint jars, and seal.
