Note: The pennywhistle party book (unsure of exact name) also has a Castle Cake.

Ingredients

  • 2 cake mixes
  • 1 can chocolate frosting
  • 1/2 cup fruit jam
  • 4 empty ice-cream cones
  • Chocolate sugar wafer cookies
  • Miniature nonpreil candies
  • Two 4-inch pieces of licorice shoelace
  • Two 9x13 cake pans
  • 4 empty toilet paper tubes
  • Brown construction paper or brown wrapping paper
  • 3 x 4 inch piece of red construction paper
  • 2 1/2 x 6 inch piece of cardboard
  • Glue
  • Toothpicks
  • Scissors

Directions

Bake the cakes following package directions. While cakes are baking, make the turrets. Cut four 4 1/2 x 6 pieces of brown paper. Wrap each one around a toilet paper tube and glue in place. Allow the glue to dry. When the cakes are cool, level the tops. Spread jam on top of 1 cake and place the second cake on top of it. Cut off 1 inch diagonally from each corner, then frost the entire shape. For the castle entrance, round 1 end of the piece of cardboard by placing a drinking glass on the cardboard and tracing around it. Cut out the rounded shape. Fold the cardboard 4 inches down from the top so you have a door and a drawbridge. Cover 1 side of the door and drawbridge with chocolate frosting and place it in the center of 1 long side of the cake. Outline door with nonpareils. Insert 1 end of each of the licorice shoelace into the cake on either side of the door: put the bottom ends nest to the drawbridge. For the turrets, place the covered toilet paper tubes at each of the cutout corners of the cake. Put a small amount of frosting along the rim of each of the ice-cream cones and put the cones upside down on top of the tubes. To make the pennants, cut four 1 x 3 inch pieces of construction paper, fold them in half, cut a point at one end, and open them up. Cut or break off the bottom one-third of 4 toothpicks. Place a shortened toothpick on the fold line, add glue and fold in half. Put a small amount of frosting on the end of each toothpick and place them on the points of the ice-cream cones. For the crenellations, cut the chocolate sugar wafers into thirds and place them around the top edge of the cake. Place miniature nonpareils in the frosting below the cookies. TIPS: The Castle Cake is quite heavy. When you move the Castle Cake, carry it without the turrets and put them in place once the cake is on the table.
