Ingredients
- 3-Day Old Sponge Cake
- Brandy
- 6 Egg Whites
- 1/2 tsp Cream of Tartar
- 1/4 tsp Salt
- 3/4 Cup Sugar
- 3/4 Cup Superfine Sugar
- 1 tsp Vanilla
- 1 1/2 Qts Ice Cream
- Candied Fruit
Directions
This dish is BROILED not baked. Preheat your broiler to 500 degrees.
If possible, use one of the special dishes designed for production of this concoction. If not, form your own "cake base" using an ovenproof oval dish. Line the dish with a 1/2" layer of three-day old sponge or angel food cake. Sprinkle it lightly with brandy. Prepare additional three-day old sponge or angel food cake in 3/4" strips to be used to cover the ice cream.
Prepare a meringue by beating the egg whites until frothy. Add the cream of tartar and salt and beat until almost stiff. Beat the superfine sugar in one tablespoon at a time. Continue beating and add the vanilla. Beat until stiff. Work very quickly from here on.
Soften the ice cream enough so you can work with it and shape it. Form the ice cream into an oval mound on the cake base. Cover this melon shape with the 3/4" layer of three-day old sponge or angel food cake. Cover the ice cream completely. Coat with the meringue. This must be put on in a layer at least 3/4" thick and must completely cover the melon shape down to the dish. You may use some of the meringue in a pastry bag to add borders and designs. Decorate with candied fruits. Place under the broiler for no more than THREE MINUTES. WATCH IT VERY CLOSELY - IT IS ONLY THERE TO BROWN. Serve at once.
