Ingredients

  • 5 lbs. ground beef or chuck
  • 5 tbsp Tender Quick Morton Salt
  • 2 1/2 tbsp mustard seed
  • 2 1.2 tbsp coarse ground pepper
  • 2 1/2 tbsp garlic powder
  • 1 tbsp Liquid Smoke

Directions

Mix all ingredients together in a glass or ceramic bowl. Cover and refrigerate. Mix once a day for the next three days. On the fourth day, shape mixture into five 6 inch long rolls. Put rolls on a broiler pan and bake at 150 degrees for 10 hours, turning once after 5 hours. The logs will look red when done.
