Ingredients

  • 1 slice white bread, crusts removed
  • 2 egg yolks
  • 2 tbsp milk
  • 1/2 lb. (1 1/2 c.) cooked chicken, finely chopped
  • 1 tbsp finely chopped onion
  • 1 tbsp cream cheese
  • 1 tbsp chopped parsley
  • 4 tbsp dry breadcrumbs
  • Vegetable oil for frying

Directions

Crumble bread into bowl and stir in the egg yolks and milk. Add the chicken, onion, cream cheese, parsley and salt & pepper to taste; mix well. Form the mixture, with your hands, into 10 little logs, then roll each croquette in the breadcrumbs to coat it thoroughly. Chill 30 minutes. Heat oil in a frying pay to 375 degrees. Add the croquettes, a few at a time, taking care not to overcrowd the pan. Cook quickly to brown on all sides. Drain on paper towels.
