Ingredients

  • Frog legs
  • margarine or butter
  • Salt, pepper and paprika
  • egg
  • cracker crumbs or cornmeal

Directions

Frog legs can simply be fried in margarine or butter until tender.

Another way to fry frog legs is to sprinkle them with salt, pepper and paprika, then roll them in cracker crumbs. Dip them in egg, and roll them in the crumbs again. Fry in deep fat at 375 degrees F. for 3 minutes or until golden brown. Drain and serve immediately. The paprika makes the meat take on a prettier golden brown color as it fries and does not affect the flavor.

Frog Legs a la Newburg:
Boil together for 3 minutes 2 tablespoons butter, 1/2 cup Madeira salt and cayenne. Add 3 egg yolks and 1/2 pint cream, slightly beaten. Cook 2 minutes, stirring constantly. Pour over fried frog legs.


The younger and smaller a frog is, the sweeter and more tender its meat will be.
