• 1/2 c. sugar
  • 2 tbsp salt
  • 1/2 c. white wine
  • 1/2 c. Canola oil
  • 1 1/2 tsp bean sauce
  • 1 tbsp Hoisin sauce
  • 2 tbsp soy or tamari sauce
  • 1 tsp five spice powder
  • 3 cloves fresh garlic, finely chopped
  • 1 tsp red food coloring (optional)


This is marinate: 1 rack of spare ribs; 2 lbs. chicken wings; 5 lbs. boneless pork or 1 whole duck.

Combine ingredients in large Zip top bag. Add meat to be marinated. Refrigerate at least 24 hours, turning several times. (If using boneless pork, slice into strips before cooking. For all but duck, broil or grill outdoors till done. For ribs, slice apart after cooking.)
