Ingredients
- 1/2 pound green beans with the ends trimmed
- 1/4 cup dried cranberries
- about a handful of sliced almonds
- 2 tbsp cold lemon juice
- 1 tbsp olive oil
- 1 tbsp red wine vinegar
- 1/4 tsp salt
- salt and pepper to taste
Directions
soak the green beans for about 30 minutes in ice water.
bring about 6-8 cups water to a rolling boil and add 1/4 tsp salt. add the green beans and boil for about 5 minutes. drain and soak in ice water again until cold.
while the green beans cool; mix the lemon juice, olive oil, red wine vinegar, cranberries, and almonds. once the green beans have cooled place them in a large bowl and toss with the fruit and nut vinaigrette. serve as a side or as a tasty salad :)
