Ingredients

  • 1 pie shell (9") , partially cooked
  • 2 Tbsp. green onions, minced
  • 3 Tbsp. butter
  • 1/4 lb. fresh cooked shrimp meat, chopped
  • 1/4c. dry white wine
  • salt & pepper to taste
  • 3 eggs
  • 1 c. half & half
  • 1 Tbsp. tomato paste
  • 1/4c. swiss cheese, grated

Directions

Preheat oven to 375. Saute onions in butter until soft. Add chopped shrimp, sdalt and pepper. Cook for 3 minutes, stirring constantly. Add wine and bring to boil, then remove from heat. Beat eggs in bowl with cream and tomato paste. Add shrimp mixture. Pour into pastry shell, sprinkling cheese on top. Bake for 30-40 minutes or until puffed and golden.
