* Finely mince generous amounts of fresh rosemary leaves and knead them into the dough for focaccia Rosmarino-style.

*Press green and black olives(kalamata preferred) on top of dough after its second rising. Brush with olive oil that contains generous amount of minced garlic. Sprinkle lightly with sea salt.

* Top with domestic or wild mushrooms(such as shiitake or porcini) that have been sauteed in olive oil and minced garlic. Top with mushrooms 10 to 15 minutes prior to the completion of baking.

* Finely mince fresh sage leaves and knead into dough.

*Top with sliced green onions and olive oil. Fold half into the dough along with some toasted walnut pieces. Place remaining onions on top of focaccia 10 minutes prior to completion of baking time.

*For a sweet version, add generous amounts of golden raisins to the dough.
