Ingredients

  • 1 1/2 lbs. lean ground beef
  • 1 c. soft breadcrumbs
  • 1 sm. onion, diced
  • 1 egg, beaten
  • 1 tsp salt
  • 1/2 tsp pepper
  • 16 oz. tomato sauce, divided
  • 3 tbsp brown sugar
  • 3 tbsp vinegar
  • 2 tbsp Dijon mustard
  • 2 tsp Worcestershire sauce

Directions

Combine beef, breadcrumbs, onion, egg, salt & pepper; add 1/2 c. tomato sauce and mix well. Shape into a 7 x 12 loaf; place on lightly greased rack of a broiler pan. Combine remaining tomato sauce and balance of ingredients in saucepan; stir well. Bring to boil over med. heat; reduce heat and simmer about 10 min. stirring occasionally. Set aside. Bake meat loaf at 350 for 1 1/2 hours, basting with the BBQ sauce the last 30 min. Serve with remaining sauce.

(Another quick, tasty idea is to add an envelope of Taco Seasoning mix and 1/2 c. water to a basic meat loaf recipe. Gives a Mexican flavor.)
