Ingredients
- 2 1/2 cups sifted Swans Down Cake Flour
- (You can use another brand of cake flour)
- 1 3/4 cups sugar
- 1 3/4 tsps baking soda
- 1 tsp salt
- 2/3 cup shortening at room temperature
- 1 1/3 cups milk
- 1 tsp vanilla
- 2 eggs
- 3 squares unsweetened chocolate, melted and
- cooled
Directions
Sift flour with sugar, soda and salt. Stir shortening to soften. Add flour mixture, 1 cup milk and vanilla;mix until flour is dampened. Then beat 2 minutes at medium speed of electric mixer or 300 vigouous strokes by hand. Add eggs, melted chocolate and remaining 1/3 cup milk; beat one minute longer or 150 strokes by hand Pour into 2 greased and floured 9 inch layer pans. Bake at 350 degrees about 35 minutes or until cake tester is inseted in center and comes out clean. Cool 10 minutes in pans;remove from pans and cool completely on racks.
Alternate baking pans: This cake may also be baked at 350 degrees in three 8 inch pans for about 30 minutes or in a 9 X 13 pan for 40 minutes.Recipe may be doubled, if desired. If necessary refrigerate part of the batter while first layers bake.
