this is a good basic vinaigrette recipe. Other vinegars and oils can be substituted for an infinite range of possibilities. You may be tempted to leave out the parsley and lemon juice but it makes a huge difference in the taste.
Ingredients
- 2 oz fig balsamic vinegar
- 1/4 tsp fresh thyme, minced
- 1/4 tsp minced garlic, red onion or shallot
- 1/4 tsp fresh lemon juice
- 1/4 tsp sugar
- 1/4 tsp dijon mustard, or less to taste
- 1/4 tsp fresh parsley, minced
- salt and pepper to taste
- 6 oz olive oil
Directions
Combine all ingredients except the oil and allow to "hang out" in the bowl a few minutes. This allows the flavors from all the ingredients to marry.
Whisk in oil, very gradually.
You can also do this in a blender but in that case I add the herbs at the end so they are not too finely minced. Be very careful not to add the oil in too quickly or it will "break" the emulsion and it will separate.
