My husband likes his more lemony so he adds the other lemon, and sometimes, if we cannot find any ripe tomatoes, he puts in about a cup of his favorite chunky salsa (drained) instead of the tomatoes and onions.

Ingredients

  • 4 avocados
  • juice of 1-2 lemons, to taste
  • 1 large tomato, coarsely chopped
  • 1 small onion, finely chopped
  • a few dashes of your favorite hot pepper sauce, optional

Directions

In a large bowl, mash 3 of the avocados well. Chop the fourth avocado into chunks. Add the tomato, onion and the chopped avocado to the mashed avocado and mix in gently. Now add the lemon juice...I put the juice of one lemon in first, mix it in and taste to see if it needs more or not. Next, add the hot pepper sauce, if desired, and mix again. Serve with tortilla chips and salsa or on any Mexican dishes...fajitas, tacos etc.
