Ingredients

  • 1 tbsp olive oil
  • 1 large green pepper, chopped in 1/2" pieces
  • 1 large red pepper, chopped in 1/2" pieces
  • 1 small yellow onion chopped in 1/4" pieces
  • 3 tbsp balsamic vinegar
  • 2 tbsp 100% pure maple syrup
  • 1/2 tsp dried crushed red chiles (or more to taste)
  • 4 pork or chicken sausages, preferably hot Italian
  • 4 submarine or large hot dog rolls
  • 2 tbsp butter

Directions

Prepare grill.
In large bowl, mix first 7 ingredients together making sure to coat the peppers and onions well.
Grill mixture on an oiled rack above coals until just tender.
Meanwhile, prick sausages with a fork and grill on medium to low until just cooked through.
Spread butter on inside of rolls and toast on grill until golden.
Insert one sausage in each roll and cover with pepper onion mixture.
