Ingredients

  • 1 1/2 c. flour
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon
  • 1/2 c. sugar
  • 1/3 c. butter/marg.
  • 4 c. diced rhubarb
  • 1 c. sugar
  • 1/8 tsp. salt
  • 1 Tbsp. lemon juice (opt)

Directions

To make crumb mixture:

Sift together flour, salt, cinnamon and sugar. Cut or rub in butter or marg. until mixture is crumbly. Spread half of the crumb mixture evenly over the bottom of 8" square cake pan. Press down firmly.

Combine rhubarb, sugar, salt and lemon juice. Spread evenly over mixture in pan. Sprinkle remaining crumb mixture over rhubarb and press down.

Bake in preheated 375 degree oven for 45-50 min.

Serve with sweetened whipped cream or ice cream.
