This recipe was contributed to the book: Five Star Recipes from Well-known Latter-Day Saints by Michael Ballam, founder and director of the Utah Festival Opera Company. He has performed through America, Asia, and Europe sharing the stage with the world's greatest singers, including Joan Sutherland, Kiri Te Kanawa, Birgit Nilsson, and Placido Domingo.

Ingredients

  • 3 c. flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 eggs
  • 2 Tbsp sugar
  • 3 c buttermilk
  • 6 Tbsp melted shortening or vegetable oil

Directions

Combine dry ingredients in medium bowl and set aside. In a large mixing bowl, beat together eggs and sugar. Stir in buttermilk and shortening; then add the dry ingredients, gently stirring until blended.

Heat ebleskiver pan on stovetop. Thoroughly coat each cup with shortening. Fill each cup three-quarters full with batter. As it begins to bubble around edges, turn gradually with a skewer or chopstick. Cook until golden brown all around.

Serves 6 to 8.
