Ingredients

  • Large to Jumbo Shrimp
  • olive oil
  • butter
  • cayenne
  • sherry
  • fresh minced parsley
  • salt
  • lots of freshly minced garlic
  • garlic powder

Directions

Heat oven to 450 degrees...clean shrimp and cut down the center of the back side, but not all the way through.(butterfly) On a cookie sheet, spray lightly with vegetable spray and place shrimp tail sticking up in the air. Spray them lightly with vegetable spray and place in oven about 10 to 12 minutes, until they turn a pretty pink color. While they are baking, in a small skillet, add other ingredients, using half oil and half butter. Simmer slowly. Note: I don't measure anything, we love garlic, so I use a lot, at least 1 bulb for 2 people. Add ingredients and taste to suit your own taste. Remove shrimp from oven and place in skillet just long enough to stir and coat everything. Place in a serving dish, serve with crusty french bread to dip into the sauce ymmm.


Note: I have tried lots of scampi recipes, but this is the best the shrimp have a nice crunchy texture to them, rather than soggy.
