Ingredients

  • 34 tsp. salt
  • 2 lbs. fish
  • 2 large onions, sliced
  • 1/2 c. olive oil
  • 2 1/3 c. tomatoes (1#3oz can)
  • 1 can (8 oz) tomato sauce
  • 1 tsp. crushed sweet red pepper
  • Salt & pepper to taste
  • 1/2 bunch of parsley
  • 1/2 c. white wine
  • 1 1/2 c. water

Directions

Salt fish, set aside a few hours in refrigerator. Make a sauce by browning onions in olive oil. Add tomatoes, tomato sauce, crushed sweet red pepper, salt, pepper, parsley, wine and water. Allow to simmer 30 minutes. Add fish. Continue to simmer until fish is cooked. Serve in deep plates over French or Italian bread. 4 servings. Whole small fish of any type can be used, or frozen fish, such as cod or haddock.
