Ingredients
- 5 medium beets
- 1 lb. beef soup meat (try your cottage ham)
- Soup bone (joint) creacked
- 8-9 c. cold water
- 1 onion, sliced and browned slightly
- 1 bay leaf
- Ground allspice to taste
- 1 garlic clove, minced
- Salt, pepper and sugar, to taste
- 1 c. canned sour beet juice
Directions
Peel and shreed beets and cook in water till tender. Strain and reserve the liquid. Use the beets in salad, or discard. Put soup meat and bone in kettle and add water to cover. It is better to start with more water and let it cook away than to add later on. Bring to boil, reduce heat and continue cooking, skimming occasionally, until meat is half done. Add vegetables and onion, spices and seasoning, and continue simmering till meat is tender. Strain, reserving boiled meat. Combine with sour beet juice and 1 c. reserved beet liquid. Season to taste, skim off fat and bring to boil. Serve in plates with cut boiled potatoes or dumplings stuffed with meat see note)., or in cups, with croutons.
