Ingredients
- A cup tahini paste
- 8 cloves garlic, coarsely chopped cup water, plus more as needed
- 1/2 cup fresh lemon juice
- 1/2 tablespoon kosher salt
- 1/2 cup extra-virgin olive oil
Directions
Combine the tahini paste, garlic, and water in a food processor and process until smooth.
Add the lemon juice and salt and pulse to blend. With the machine running, gradually add the olive oil. You may need to add more water to bring the mixture to the desired consistency. It should thin enough to pour, about the consistency of salad dressing.
Refrigerate until ready to use. The sauce will thicken a bit. Bring to room temperature before serving.THIS GARLICKY RECIPE is from Mark Doxtader's mother-in-law, Dvora Temkin, who was born in Persia and eventually moved to Israel. It's a staple of Middle Eastern cooking. Doxtader ate a lot of pita bread sandwiches slathered with this sauce when he backpacked through the Middle East in the 1990s.
