Ingredients

  • 1/2 to 1# hot pork sausage (original recipe calls for ground pork and ground chicken livers..I choose to use spicy sausage because I like it)
  • 1 c. raw long grain rice
  • 1 c. parsley, minced
  • 1 c. scallions and tops, chopped
  • 1/3 c. onion, chopped
  • 1/3 c. green pepper, chopped
  • 1/3 c. celery, chopped
  • 1 can Cream of Mushroom Soup
  • 1 can French Onion Soup
  • Red & Black Pepper or Cajun Seasoning to taste(depending on how much hot you like)

Directions

Mix sausage and rice together with your hands. Add vegetables and mix, then soups and seasonings. Place mixture in a covered casserole dish 8x8 and bake 325 for 2 hours. You can easily double this recipe, just place in a 9x13 pan. This is always a big hit at potlucks and bbqs!
