For those who might feel lazy: the classic orange-powder style mac and cheese doesn't work too well for these. I've never tried with the velveeta stuff, but I wouldn't try that either. However, the pre-made frozen kind works fine.

Ingredients

  • A batch of your favorite mac and cheese recipe. (40 oz. will make about 35 balls).
  • 2 cups fresh bread crumbs. I like to fry mine with some jalepenos and garlic for extra flavor, but any bread crumbs will do.

Directions

1. Put the mac and cheese in a freezer overnight, or until it's pretty solid.

2. Form the mac and cheese into balls an inch to an inch and half in diameter--a melon baller can be a handy aid in this process. Roll the balls in the bread crumbs, place on a cookie sheet, and put them back in the freezer 10 to 20 more minutes to reharden.

3. Deepfry at about 350 for 3 minutes. Be careful not to overcook or the balls will start to fall apart.

fried mac and cheese balls
