Mrs. Lennon made the best coleslaw in town. When asked for her recipe, she gave away her second favorite recipe. To this day, not even her grandchildren know what the original actually contained. This is the closest recipe I can come to to either of her exceptional cole slaw recipes.


  • One medium head cabbage, sliced thin
  • 6-8 medium carrots, grated
  • Dressing
  • 1/2 c. commercial or homemade mayonnaise
  • 1/4 c. olive oil
  • 1/4 c. apple cider vinegar
  • 1/4 c. whole milk or light cream
  • 1 T. sugar or Splenda
  • 2 T. celery seed
  • salt and pepper to taste


Slice cabbage, grade carrots, mix together.

Blend remaining ingredients, pour over salad mix and toss.

Let set overnight, stirring several times before serving.
