My Husband and Daughter really like this recipe. For a twist, You may melt, in a double broiler pot , 1/2 cup semi-sweet chocolate chips then drizzle on top.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 cup vegetable shortening
  • 2 eggs (1 whole, 1 separated)
  • 2 teaspoons almond extract
  • 1 teaspoon water
  • 1/3 cup whole blanched almonds

Directions

Preheat oven to 350 degrees.
In a bowl, sift flour with sugar and baking powder.
Cut in shortening until mixture resembles coarse bread crumbs. With a wooden spoon, stir in whole egg, egg white and almond exract. Mixture should be very crumbly.
Turn out onto floured surface, and knead until ingredients are thoroughly blended, and dough is smooth
and shiny. Pull off pieces of dough and roll into 1 1/4 inch balls. Arrange 1 inch apart on ungreased cookie sheet and slightly flatten them.
Mix egg yolk with water and brush each cookie well. Press whole almond in the center of each cookie.
Bake 15 minutes or until golden. When done , transfer to wire racks and let cool.
