Ingredients

  • Dried green peas
  • Ham hock or bacon
  • fresh onion
  • fresh garlic
  • salt
  • pepper

Directions

Soak peas in warm water till swolen and getting soft.Cook over low to med. heat with ham hock or bacon,coarsley chopped onion and garlic.You can't really taste the onion and garlic themselves but they add to the over all flavor.So if you want to taste them add a lot.I use 2 or 3 cloves and one onion in a five quart cooking pot.As the peas cook you need to keep an eye on it because it thickens pretty fast and will stick.You can always add water as you go to make it as thin or thick as you want it.Add salt and pepper to wards the end to taste.It has to have pepper to taste right!When it turns into a green mush it's ready!
