Ingredients

  • Two Tablespoons extra virgin olive oil
  • handful of olives
  • several zucchini
  • 2-12 garlic cloves (your taste!)
  • 1 onion
  • several tomatoes
  • fresh or dried basil
  • salt
  • pepper
  • Hint Just let the zucchini and tomatoes be in equal ratio to one another.

I don't really understand the request, but I am going to guess you are asking for something to do with the ingredients you list, Ann.

An answer jumps right out at m: Ratatouille! The olives would make a lovely twist on this classic Meditaranian dish.

1. Saute the onion and garlic in good EV olive oil over (season with salt and pepper) medium heat for about 5 minutes -- don't brown them.

2. Add the tomatoes, roughly chopped. Cook for another 5 minutes. Season again.

3. Add the zucchini, SLICED, and the olives. You might need to turn up the heat at this point to keep things bubbling. Season again.

4. If you have fresh basil, add it now. If you have dried basil, add it in step 1.

5. Cook until the zucchini is just soft.

Serve over pasta, rice, or alone in a bowl with a good, crusty bread, and sweet butter. Goes well with roasted chicken.
