Ingredients

  • 2 pounds boneless pork sirloin, 1-inch cubes
  • l large fennel bulb, sliced thin
  • 2 carrots, peeled, 1/2-inch slices
  • 2 stalks celery, 1/2-inch slices
  • 1 red onion, coarsely chopped
  • 4 cloves garlic, coarsely chopped
  • 2 bay leaves
  • 2 tbs. extra-virgin olive oil
  • 2 cups basic marinara sauce
  • 1 lb linguine, cooked al dente
  • 1/2 cup parmasean cheese
  • salt and pepper

Directions

Heat oil to medium in 4-quart sauce pan. Add pork and brown. Add garlic, onion, and bay leaves, and saute for a few minutes. Add celery and carrots, season with salt and pepper, cover and cook 15 minutes. Add fennel, reseason, cover, and cook 15 minutes. Add marinara sauce and heat until hot. Add parmasean cheese and then toss with pasta and serve.
