Ingredients

  • 10 slices of white bread
  • 2 large ripe tomatoes- chopped
  • 1 red onion- choppped
  • 6 sprigs of parsley- finely chopped
  • 1/4 C cheese- grated

Directions

1. Preheat oven to 180 degrees Celcius
2. Cut crusts off 2 sides of bread slices
3. Lightly spray muffin pans and place one slice of bread into each muffin cup
4. Bake in oven until lightly golden and toasted
5. Prepare filling:
- chop tomato
- chop onion
- chop parsley
- Grate cheese
6. Combine filling ingredients {NOT CHEESE} and place in spoonfuls into cooked bread cases
7. Serve cold or slightly warm with sprinkle of grated cheese.
