Ingredients

  • 1 loaf white bread (unsliced) cut into 1/2 inch cubes
  • 1 green zucchini, seeded and diced
  • 1 yellow squash, seeded and diced
  • 1 red onion, diced
  • 2 red peppers, seeded and diced
  • 6 plum tomatoes, seeded and quartered
  • 1 T. minced garlic
  • 1/4 c. chopped fresh basil
  • 1/2 c. kalamata olives, halved
  • 1 c. extra virgin olive oil
  • 1/4 c. balsamic vinegar
  • kosher salt and fresh ground pepper to taste
  • 2 T. lemon juice (optional)

Directions

Allow cubed white bread to sit out for several hours or overnight. In a large bowl, toss the cubed bread and all ingredients except oil, vinegar and lemon juice. Add oil and balsamic vinegar while mixing slowly. Add lemon juice, salt and pepper to taste. Taste and adjust the seasoning.
