Ingredients

  • beef mince
  • onions or shallots
  • garlic
  • mushrooms
  • kidney beans, soaked
  • tomatoes, boiled and skinned.
  • red or green chillies to taste
  • paprika
  • chicken stock
  • olive oil
  • potatoes, boiled amd mashed
  • milk or soymilk
  • butter or margerine
  • spring onions for the mash (optional)
  • 1 egg, beaten
  • cheese, grated
  • black pepper

Directions

Finely chop garlic,chillies and onions. Fry in olive oil with minced beef and paprika until brown. Add kidney beans and fry for 1 minute. Chop and add mushrooms and chicken stock, then finally the tomatoes. Allow the natural juices of the tomatoes to reduce.
Mash the potatoes with the milk, butter,spring onions,black pepper,and some of the beaten egg.
Using a large oven proof dish, spread the chilli beef on the bottom. Top with mashed potato, brush with a little of the beaten egg, and top with grated cheese. Bake at a medium heat for 30 minutes. Serve with salad and garlic bread or steamed garden vegetables.
