I made some for teachers gifts and actually had a teacher call me and say it was like the toffee her grandmother used to make, but she couldn't find the recipe!

Ingredients

  • 1 1/2 cups chopped pecans, divided
  • 1 cup sugar
  • 1 cup butter, softened
  • 1/3 cup butter, softened
  • 5 (1.55ounce) milk chocolate bars,broken into small pieces ( although I like semi-sweet chocolate chips instead)

Directions

Line a 15x10 in. jelly roll pan with heavy-duty aluminum foil; lightly grease foil ( I use butter spray Pam).

Sprinkle foil with 1 cup pecans to within 1 inch of edges.

Bring sugar, butter, and 1/3 cup water to a boil in a large heavy saucepan over medium heat, stirring constantly.

Cook mixture over medium-high heat, stirring constantly, 12 minutes or until a candy thermometer( can find at a grocery store) registers 310 degrees.(rock hard candy stage).

Pour hot mixture over pecans; sprinkle with chocolate pieces, and let stand 30 seconds.

Sprinkle with remaining 1/2 cup pecans. Chill 30 minutes.

Break up toffee and store in an air tight container. yields 1 3/4 pounds.
