I serve this with a consomme rice. It goes in the same temperature of oven and bakes for 1 hour. 2 cup Uncle Bens converted rice, 2 cans beef consomme, 3/4 stick of butter and 1 can mushrooms. One of my families favorite meals.
Ingredients
- 2 lb flank steak. Ask butcher to run through tenderizer 3x.
- fresh baby spinach. I usally get off the salad bar at store.
- about 5 pices of Swiss cheese. From deli at store.
- about 1/4 pound baked ham also from deli.
- fresh ground black pepper or I like the Montreal Steak Seasoning.
Directions
Lay out flank steak. Top with spinach layer, swiss cheese layer and then ham layer. Roll longways and cut in individual steaks about 1-1/2-2 inches thick. Secure with wooden toothpick and coat sides with pepper. Lay in a 9x13 dish and bake @ 350 degrees about 7 minutes each side.
