For every cup of fruits used, use half cup white fine sugar.

Place berries (of your choice) into a saucepan, add cold water so it just covers the berries. Bring to boiling point, stir, so some of the fruits brake down and add sugar, stiring until it has disovled. Add extra water depending on how thick you would like.

A nice touch is to add 1 teaspoon of cherry brandy for every cup of fruits used.

If you would like it smooth, boil the berries in water first, leave to cool, blend and then sieve. Keep the fruit water Then follow the process of boiling and adding sugar.
