I cater a lot of wedding receptions and this is always a favorite. As another variation, I sometimes cut a smaller shape of bread, put it on top of the cucumber and then pipe the rosette on top of the smaller shape of bread.
- Hidden valley dry dressing mix
- 8 ounces cream cheese
- Cucumbers, sliced thin
- Bread, white or wheat
- 1 small tub of whipped cream cheese (strawberry or mixed berry)(optional)
Mix 1 envelope of Hidden Valley dry dressing mix with the 8 ounces of cream cheese. Using a small biscuit cutter, cut rounds from the bread. (I usually get 3 to the slice). Spread the bread with the cream cheese mixture, top with a slice of cucumber. As an option, I pipe a rosette of strawberry whipped cream cheese in the center of the cucumber. Makes a nice presentation.
