• 3 egg whites
  • 1 tsp. vinegar
  • 3 Tbl. cold water
  • 1 tsp. vanilla essence
  • 1 cup castor sugar (very fine)
  • 3 tsp. cornflour (corn starch)


Beat egg whites until stiff, add cold water and beat again. Add castor sugar very gradually while still beating. Slow beater and add vinegar, vanilla and cornflour. Place on greased paper on greased tray and bake at 150 degrees C. (300 degrees F.) for 45 minutes, then leave to cool in the oven. When pavlova is cold, peel off paper and transfer to serving plate. Spread Pavlova with whipped cream and fruit such as kiwifruit, strawberries, peachslices, banana, pineapple, and whatever. (I have used granulated sugar with no problem. I also make individual size Pavlovas instead of one large one on the baking tray.)
