Ingredients
- 1/4 cup extra virgin olive oil
- 1/3 cup chopped red onion, or more to taste
- 1 Tbsp chopped fresh parsley
- 1 Tbsp dried basil or 1/4 cup fresh chopped
- 1 can (6 1/2 oz) white tuna, drained and flaked
- 1/2 cup black olives, chopped
- 1 clove garlic, or more to taste, crushed and chopped
- 3 1/2 cups chopped fresh tomatoes
- 2 tsp sugar
- 1 Tbsp dried oregano
- 1 Tbsp red wine vinegar
- 1/2 cup artichoke hearts, water packed, (optional)
- 1 lb. cooked pasta
Directions
Sautee garlic and onion in the olive oil over medium heat until just cooked, but not brown. Add all remaining ingredients except tuna, and cook uncovered, around 15 minutes. When sauce thickens, add tuna and heat through. Toss with cooked pasta.
