Ingredients

  • 4 medium tomatoes, diced
  • 1 jalapeno, seeded and diced fine
  • 1/4 cup onion, diced
  • 1/4 cup olive oil
  • 2 tbsp. lime juice
  • 1 tbsp. thyme, dried
  • 2 tbsp. cilantro, dried

Directions

Mix all together and refrigerate for at least one day. This salsa keeps well for up to a week in the refrigerator.

Makes 2 cups
