Ingredients

  • 1 1/2 cups sifted all purpose flour
  • 1/2 tsp salt
  • 2 1/4 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1/2 cup milk (I use lowfat)
  • 1/4 cup unsalted butter, melted
  • 1 1/2 to 2 cups peeled, chopped apples (I use around 2 large golden delicious apples)
  • Topping:
  • 1/4 cup brown sugar
  • 2 Tbsp flour
  • 1/2 tsp cinnamon
  • 2 Tbsp unsalted butter

Directions

Preheat oven to 400 F (375 F for dark pans).
Sift first five ingredients into large bowl.
Combine egg, milk, melted butter and apples in another bowl. Add to dry ingredients and stir only enough to moisten.
Turn into greased 8-inch square cake pan.
Mix dry ingredients for topping, then cut in 2 Tbsp butter. Sprinkle over batter.
Bake in middle of oven until toothpick inserted in center comes out clean (about 30 minutes).
