Ingredients

  • 4 1/2 cups chopped onion
  • 6 cloves minced garlic
  • 2 sticks unsalted butter
  • 3 cups tomato puree
  • 2 cups light brown sugar, firmly packed
  • 3/4 cup soy sauce
  • 3/4 cup rice vinegar
  • 6 tablespoons chili paste with garlic
  • 12 pounds country style spareribs

Directions

Barbecue Sauce - makes about 9 cups. You can make the entire recipe for the sauce and freeze half and use it for other purposes like barbequed chicken, pork chops, etc and decrease the amount of ribs you want to use.

In a large, heavy saucepan cook the onion and garlic in the butter over low heat, stirring, for 15 minutes, or until softened. Add the remaining sauce ingredients, bringing the sauce just to the boil, and simmer occasionally, for 30 minutes.

While the sauce is simmering, blanch the spareribs in a large kettle of simmering water for 30 minutes and drain them. Arrange the ribs, meaty side up, in one layer, and bake them in a preheated 375 degree oven for 20 minutes. Brush the ribs lightly on both sides with some of the barbecue sauce and bake, meaty side down, in a 350 degree oven for 20 minutes. Turn the ribs meaty side up, baste them generously with the sauce, bake them for 20 minutes. Base again with the sauce and bake 20 minutes more. Serve.

Serves 8. Worth the effort. Sublime.
