Ingredients

  • 1 lb green beans,tips removed,cut in half
  • 4 cups water
  • 1 tsp salt
  • 1 large onion, diced finely
  • 2-3 cloves garlic,minced
  • 2 med. fresh tomatoes,skinned and seeded,sliced
  • 2 sundried tomatoes, softened and diced
  • 3 tblspn olive oil + 1 tbspn unsalted butter
  • 2 tbspn tomatoe or spaghetti sauce
  • 1 tspn chicken bouillon powder
  • salt
  • black pepper
  • dried basil or oregano

Directions

Bring water in a tall pot to boil. Add 1 tspn salt and add green beans. Cook at a simmer until beans are fork tender. Drain and keep warm in a low oven. Meanwhile while beans are cooking, in a sauti pan heat olive oil with butter. Add diced onion and 3/4 of the minced garlic to the pan. Sauti until onion is translucent. Add fresh tomato slices and diced sundried tomato to pan. Turn heat up to let tomatoes simmer for 3 minutes. Add a pinch of salt, lots of freshly ground black pepper, remaining garlic, 2 tspn tomato/spaghetti sauce, chicken bouillon powder. Stir together and let simmer slowly for another 5 minutes until thick. Add dried basil and/or oregano and let simmer for 2 more minutes. Remove from heat. Taste and adjust seasonings. Pour the sauce over the warm green beans. Lightly fold the beans. Turn beans into a casserole dish. This makes a great side dish to serve with roast chicken or turkey and can be warmed up in the microwave.
