- 1/4 Cup olive oil
- 3 Tbls sugar, divided 2 + 1
- 2 Tbls vinegar
- 1 Tbls fine chopped fresh parsley
- 1/2 tps salt
- 1/4 tps fresh ground black.pepper
- 1/4 tps red pepper sauce, hot
- 8 Cups fresh spinach, packed
- 1 Cup celery, bias-cut 1/8"
- 3 Tbls chopped green onion
- 1 can (11-12 oz) Mandarin Oranges, drained
- 1/4 Cup Almonds, sliced

In a jar combine olive oil 2 Tbls sugar, vinegar, parsley, salt, blk. pepper, and red pepper sauce. Shake well and chill.
In a small sauce pan sauti almonds and 1 Tbls sugar over medium heat until almonds are golden brown, let cool.
In a large salad bowl combine spinach, celery, green onion, Mandarin oranges and dressing tossing until salad is covered. Before serving sprinkle with caramelized almonds.
