  • 1-1/2 pounds fresh asparagus
  • 5 slices white bread, crusts removed
  • 1 cup shredded sharp Cheddar
  • 2 eggs, beaten
  • 2 cups 1% milk (low-fat)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 Tablespoon melted butter

Directions

Clean asparagus and cut off 2-inch tips; save tips. Cut stalks into 1-1/2 to 2-inch pieces. Cut bread into 1-inch squares. In a shallow casserole, layer bread, cheese, and asparagus.

Combine eggs, milk, salt, pepper, and butter in blender. Pour over casserole and bake, uncovered, in 325-degree oven for 45 minutes to an house until set. Salt reserved tips, wrap into square of foil, and bake along with strata for the last 15 minutes. Arrange tips on top of strata and serve.

Note: Unbaked strata will stand in refrigerator overnight. Allow more baking time if cold.
