Ingredients
- 3 tablespoons yellow mustard
- 1/2 cup plain yoghurt
- 2 tablespoons olive oil
- 1 tablespoon chopped dill
- 1/3 cup chopped scallions
- 1/3 teaspoon pepper
- 1 tablespoon white wine vinegar
- 16 sprigs of fresh dill
- 4 salmon steaks (about 6 ounces each)
Directions
Put the mustard, yoghurt, olive oil, chopped dill, scallions, pepper, and vinegar into a small saucepan. Blend well with a wire whisk.
Press 2 sprigs of dill onto the bottom of each salmon steak. Put the salmon in a steamer and press 2 more springs of dill onto the top of each salmon steak. Cover, bring the water in the bottom of the steamer to a boil and and steam for about 6 minutes. Turn the heat off and let the fish stay in the covered steamer for another 3 minutes.
Gently heat the sauce until it is warmed through.
Transfer the fish to the serving plates. Remove the bone and peel away the skin. Serve the fish with the sauce.
