Ingredients

  • 2 cups cooked, mashed winter squash
  • 2 cups herb seasoned croutons
  • 1 cup milk
  • 1/2 cup butter
  • 1 cup Cheddar cheese, shredded
  • 1/2 cup onion, chopped
  • 2 eggs, lightly beaten
  • Salt & pepper to taste

Directions

Combine squash and croutons in a bowl, set aside. In a saucepan, combine milk and butter and heat until butter melts. Pour over squash
mixture and blend well. Stir in remaining ingredients. Spoon into a 1 1/2 or 2 quart greased casserole dish. Bake, uncovered, at 375
degrees F for 50-60 minutes and golden brown on top. Let stand 5-10 minutes before serving.
