Truly delicious

Ingredients

  • one whole chicken, cut into small pieces
  • two large onions, chopped
  • 4 arms of celeru stalk
  • 3 large carrots, peeled and chopped
  • 1 pound chopped meat (or choped turkey)
  • 1/4 cup seasoned bread crumbs
  • salt and pepper to taste (I use lots of pepper)
  • 1-1/2 t oregano
  • 2 diced garlic cloves
  • 1/2 cup fresh parsley (diced
  • 1 12 oz large can stewed tomatos (or chopped tomatos)
  • 1/4 cup red wine
  • 6 additional chicken wings
  • 1 egg

Directions

saute celery, onions, garlic and carrots. (you can also use the small peeled carrots (about a cup) unil soft and golden. Remove and put aside. In same pan, brown the chicken parts until seared. Add the sauted vegetables onto top of the chiken parts.
Make meatballs using the choped meat, seasonings and bread crumbs and egg. Add the meatballs to top of the pot. Pour tomatoes and wine over and just shake the pot. Cover and cook for 1 hour or more, until the chicken is soft and tender. You can stir and mix after about 40 minutes (0ne the meatballs are formed). I usually add a little olive ol when I brown the chicken so it does not stick to the pot.
