Ingredients
- 1/2 c shredded Monterey Jack Cheese
- 1/2 c ricotta cheese
- 8 oz shrimp or crab meat, cooked
- 3 scallions, sliced
- 1/4 c canned diced green chilies, drained
- 8 flour tortillas
- Sauce ingredients:
- 3 T flour
- 3 T butter
- 1 c milk
- 1/2 c chicken broth
- Salt, pepper and cayenne, to taste
Directions
Mix first five ingredients. Heat tortillas to soften. Fill tortillas with shrimp or crab filling and roll up. Place seam-side down in greased 9x11 pan. Spoon sauce over and bake 25-30 minutes at 350.
Melt butter. Whisk in flour. Stir in remaining ingredients. Cook until thickened, stirring constantly. While the crepes are in the oven, prepare rice and a vegetable to serve as side dishes. Serve sauce over crepes.
