Ingredients

  • sweet potatoes (the ones with the orange flesh), fresh milled pepper and salt, milk, a little butter, herbs if desired.

Directions

make this right before serving, and serve immediately! : take sweet potatoes (when buying pick thinner ones as they are sweeter) wash, and then taking big microwave safe bowl, place potatoes in bowl, with about an inch of water at the bottom. Cover loosely with lid or cling film, and then zap on high for 4 - 6 mins (when you poke a skewer through the thickest part of the potato there should be no resistance) the skin will also be a little loose. Peel the skin off the potatoes and mash like mad with a tablespoon of butter, with a sprinkling of salt, and pepper. Then add in a splash (2 soupspoon fulls of milk) this will give you a really creamy texture without the fat of lots of butter or cream. for variety you can also add in some chopped herbs like basil or parsley.
