This is the simplest dressing but we use it for all kinds of salads. Our favorite is mixed spring greens with toasted pine nuts or walnuts, crumbled feta cheese and mandarine orange slices. My family loves it!


  • 1 tablespoon honey
  • 1 teaspoon dijon mustard
  • 3 tablespoons balsamic vinegar
  • 1/2 cup peanut or light olive oil


whisk together first three ingredients until well blended. Drizzle oil into mixture while still whisking until dressing becomes thick (about 1-2 minutes.

2 tablespoons equals about 50 calories.
